Curing station

PT. Indo Spices operates curing process at its proprietary 100m x 100m Curing Station in Balige, North Sumatra, Indonesia. The beans are laid out on the table with a direct expose to the sun, covering the beans using a blanket at 1-2 pm to allow the flavor develop and bring them back into the warehouse in a wrapped blanket. This sun curing practice happens for 10-14 days depending on the weather condition. When the moisture content reduces to 35%, the beans are put on the racks for drying for about 2-3 weeks with detail attention on each day to prevent molds.
